We sourced our corn from Yadkinville NC where a single family grows this variety of food grade popping corn. It has a brilliant yellow shine, and tastes of fresh June sweet corn on the cob. Kilned above gelatinization point, extract is more readily available and is much easier to work with than its raw counterpart which would require employment of a cereal mash.
